Since today is a big football day, I was planning on making a healthy yet yummy appetizer for the game. But I didn’t make it to the grocery store yesterday and I’m not going out today!! So I decided to make prana balls for something pretty healthy but also a little sweet! If you’re in my New Year New You group, don’t even ask about the portions or types of foods these would count as!! I’m sure these are a “cheat” but a pretty healthy one especially if you don’t overindulge. Recipe below if you’re interested!

1 cup old-fashioned oats
1/2 cup all-natural peanut butter 
1/2 cup ground flaxseed 
1/2 cup chocolate chips (I use vegan chips)
1/3 cup honey

Mix all ingredients in food processor. Put in fridge for 30 minutes to cool. Roll into balls, 1 inch in diameter or your preference. Enjoy!

1 cup @bobsredmill oats (broken down in blender or food processor is best)
1/2cup creamy peanut butter (I used @crazyrichardspb )
1/3 cup @naturenates honey (tip: spray your measuring cup with coconut oil before measuring your honey so it doesn’t stick)
2 tablespoons @traderjoes chia seeds 
2 tablespoons @bobsredmill Almond Meal
1/4 cup shredded unsweetened coconut 
1/2 teaspoon vanilla extract 
Pinch of sea salt 
1/4 cup mini chocolate chips 
1 scoop @doterra chocolate protein powder. 
2 Tablespoons @vivanaturals  Cacao powder. 
Mix all ingredients in bowl, roll into balls using cookie scoop, lay in a single layer and refrigerate for an hour until set, and then store in airtight container in fridge. 🙌🏼😋👌🏼

My first attempt at the @deliciouslyella lemon cake and it was heavenly. I didn’t have time to make the lemon jam or icing so I used @stdalfourukofficial #sugarfree raspberry jam in the middle and left it ‘naked’ on top. We took it to a family play date yesterday and it went down really well with kiddos and grown ups alike. i couldn’t leave it to cool entirely as we were running rather late so it was warm and quite squidgy and quite “pudding-like” but I didn’t hear any complaints! It was even better the second time around topped off with chilled coconut cream 😋 It was so tasty and now it has gone. And I am really sad about it! A simple but perfect recipe for the best healthy blueberry muffins, made with oatmeal, whole wheat flour, and cinnamon. Moist, fluffy, and berry PACKED!

Ingredients
- [ ] 1 1/2 cups white whole wheat flour — plus 1 tablespoon, divided
- [ ] 3/4 cup old-fashioned rolled oats
- [ ] 1/2 cup lightly packed light brown sugar
- [ ] 1 tablespoon baking powder — I prefer aluminum free
- [ ] 1 Tablespoon Flaxseed Meal
- [ ] 1/2 teaspoon ground cinnamon
- [ ] 1/2 teaspoon kosher salt
- [ ] 1 cup nonfat milk — plus 2 tablespoons
- [ ] 1/4 cup unsalted butter — melted and cooled
- [ ] 2 large eggs — at room temperature
- [ ] 2 teaspoons pure vanilla extract
- [ ] 1 cup blueberries — fresh or frozen—do not thaw if frozen

Instructions: - Place a rack in the center of your oven and preheat to 400 degrees F. Lightly coat a standard muffin tin with nonstick spray or line with paper liners, then coat the liners with nonstick spray. Set aside.
- In a large mixing bowl, stir together 1 1/2 cups white whole wheat flour, rolled oats, brown sugar, baking powder, cinnamon, and salt. In a separate bowl, whisk together the milk, butter, eggs, and vanilla. Make a well in the center of the dry ingredients, add the wet ingredients to the well, then carefully stir with a wooden spoon, just until blended.
- Gently toss the blueberries with the remaining 1 tablespoon flour, then fold them into the batter, discarding any excess flour that doesn't stick to the blueberries. (This will prevent the blueberries from sinking to the bottom of the muffins.)
- Divide the batter among the prepared muffin cups. Bake for 18 to 20 minutes, until golden brown and a toothpick inserted in the center comes out clean. Remove from oven, and let cool in the pan for 10 minutes, then transfer to a rack to cool completely.

Happy Dance for Homemade Chocolate that takes 5 minutes to make💃 When I got the diagnosis of #celiacdisease I knew just eating #glutenfree wasn’t going to cut it. My energy levels were so low, I knew I needed to fill my body with food that nourished it and remove things that caused inflammation: Refined sugar, dairy, grains. Over time, I have been able to add some of these things back into my diet without issues🙌🏼 But dark chocolate has definitely helped eating well long term sustainable. .

I have made this recipe with coconut oil, maple syrup, and raw cacao. The problem was that it wasn’t portable and started melting within minutes. Recently, I have been melting a pound of 72% dark chocolate I buy @traderjoes for a few dollars. You can do this in the microwave, but bc I prefer avoiding them, I boil water over the stove and fit a oven safe glass dish over the water to make a double boiler. I stir in chunks of chocolate until the whole pound is melted. Then line a pan with parchment paper and pour the chocolate in a large rectangle, but do not spread it too thin. Then comes the fun part: the toppings! You can add whatever sounds good: pomegranate arils, toasted hazelnuts, etc. This particular bar I used salted cashews, dried cherries, unsweetened dried coconut, and a little candied ginger (all from #traderjoes). Put in the fridge to set for 2 hours or the freezer for about 20 minutes until firm. Cut or break into pieces. Eat all by itself or serve as the chocolate on fancy smores🍢🍫 #tasteandsee #thelordisgood #favoritethings

Lighting was super odd this morning, but I whipped up a pancake plate for breakfast 🤤 ➡️➡️➡️ pancakes were made with 1/3 cup @kingarthurflour gf pancake mix, 1/3 cup almond milk, & 1 whipped egg white, then topped with @fourthandheart pink Himalayan salt ghee and cinnamon, then a side of soft scrambled eggs w nutritional yeast, cracked black pepper, & smoked paprika, some sautéed kale w red pepper flakes, and some raspberries. Off to do some hw, workout, & spend time with friends, happy Sunday!!! 🌟💛💫✨

Healthy Banana Bread 🍌🍞! No butter, no sugar, no oil, & no flour and no crazy ingredients- all from stuff around your house! I make this every time I have a few bananas that are about to go bad! Super Easy, good, clean, cheap, & quick! Simply mash up 3 over-ripe bananas in a small glass bowl, then add 2 eggs, 2 cups of old fashioned oats (quick oats work too!), 1 tsp. Baking soda, 1/2 tbsp. Happy Sunday friends! Here’s a plant-based, refined sugar free and gluten free breakfast muffin for an easy on the go breakfast which you can bake up in advance for the busy weekday mornings or just enjoy with friends and family for a healthy Sunday brunch!! .

It’s made with baked pears and gram flour. Dressed up to look pretty in pink with a simple coconut cream and berry blend which makes a tasty and healthier icing. .

I made these to use up some fruit that was beginning to turn as I prefer not to waste it. What’s your fave recipe to make good use of older fruit and veg? .
Deets: the leftovers were pears, clementines and apricots to which I added some raisins and baked them all in a little cinnamon infused water. I blended everything in the food processor with gram flour, peanut butter, a little olive oil, orange extract, baking powder, pinch of salt, bicarbonate soda, date syrup, agave syrup with a teaspoon of apple cider vinegar mixed in just before pouring the mixture into the muffin tray. .

The icing is simply coconut cream from the top of a can of coconut and some puréed berries. It turned out light, naturally sweet and delicious, if you like coconut! One son loves it, the other hates it 😍😖!!!🤣🤣🤣!

Found this fab infographic on the diet/ binge cycle, which, seeing as the dreaded January diet posts and “back on it” shouts are still in full swing, I wanted to share. This is just your little Sunday note to say: ❌ You do NOT need to follow highly restrictive diets which make you feel deprived, anxious and or stressed ❌ You do NOT need to overexercise or “purge” yourself for anything you have eaten through excessive exercise or restriction of food ❌ There is no one best way to eat for health and any coach or nutritionist who says otherwise is probably trying to sell you something ❌ If you fall off your “diet wagon” and eat (enter restricted food here), you are NOT a failure and you should not feel guilty or the need to punish yourself through skipping meals or massively restricting entire macronutrients from your diet (I.e. carbs). ✅ You should, eat mindfully (I think we can all benefit from sitting down and enjoying our food more, especially from a digestive point of view) ✅ Respect our body’s hunger and satiety signals and respond accordingly without judgement or guilt ✅ Eat a variety of fruit and vegetables (because we need these for optimum health, try and aim for 8-10 servings per day, around 2 servings to be fruit) ✅  Eat plenty of fibre, because that is linked to a plethora of health benefits (shoot for 30g per day, easing your way up to this to avoid any tummy discomfort, especially if you’ve been way under this) ✅ Keep hydrated because dehydration can affect exercise performance and it’s also easy to mistake thirst for hunger signals and we need water for all of our vital processes, including but not limited to, our properly functioning metabolism I COULD GO ON phew 😅 Remember to love and respect your body because it deserves that and tell anyone who makes you feel otherwise to 🤫
