I've been busy menu planning and recipe tweaking for the past couple of weeks, getting ready for @ourhopeforhealth indigenous health retreat in April!! I'm so excited to be able to help out with my recipes and cooking - my daughter @just_acountrygal_ is coming with me and we'll be cooking with a local team, making plenty of delicious, healing food for the participants, practitioners and staff! Wooo!!! .
While I was working on upscaling my recipes, I was thinking that you guys may need some bulk cooking recipes now and then - for a dinner party, an event, or a big freezer cook up with friends - so I thought I'd share my Butter Chicken Recipe for 40 with you! 😘 You can obviously halve the recipe if you're just bulk cooking for your freezer... and if nothing else, you can just make the spice mix and have it on hand to use for the next 7 batches you make. 😃 (Mix up the spices, weigh, then divide by 7 for 1 batch - write the weight for 1 batch on the jar so you remember!)

I had some mini stand and stuff cases in the freezer and so made up some quiches- 2 for 2sp and the ones without the shells are 0sp.
Oh and I made my scones. Some with dates and some with blueberries. They are 2sp each.

I felt a bit average last night, so I made this big ass salad for dinner, alllll for meee.. minus a few pieces of fried halloumi and avocado cos sneaky fingers got in and PICKED IT OUT OF MY BOWL while I was eating. Kids.. mixed lettuce, cucumber, red onion, orange, pickled fennel, avocado, fried halloumi, toasted pepitas and pine nuts. Dressing was a bit of the juice from the orange, apple cider vinegar, olive oil and sea salt. I could eat this again right now.

*Roasted purple cauliflower and butternut squash (in coconut oil with cayenne, paprika and oregano), lemon juice squeezed on while roasting
*Chicken, pan fried with red onion, garlic, roasted red pepper and jalapeno
*Red cabbage - salted (finely shred, mix in salt, leave for a few hours to draw out the liquid, rinse thoroughly, then mix in olive oil and lemon juice)
*Extra avocado oil on the rocket

This recipe is a spin-off of the pumpkin cashew butter pancake recipe. The pancakes keep for a couple days in the fridge and several months in the freezer.
🍌 👉🏻 ¼ cup coconut flour • ¼ teaspoon cinnamon • ¼ teaspoon baking soda • 2 tbsp. cashew butter butter ( but you can sub any nut butter) • 2 eggs, slightly beaten • 1 egg white, beaten stiff (optional, but makes the pancakes fluffy) • ½ tbsp. maple syrup (you can sub stevia or another sweetener) • 3 tbsp. mashed banana • 2 tbsp. almond milk • 🥞 Paired with a crispy ghee-fried egg 🍳 , sautéed spinach & avocado 🥑.

This recipe is a simple way of incorporating beetroot into your diet and doesn’t require any pre-roasting.

Beetroot is high in immune-boosting nutrients such as Vitamin C, folate, potassium and manganese. It is also a great source of fibre and supports the body with its detoxification processes as well as helping to purify the blood and liver. Beets also contain a nutrient that helps to protect cells from environmental stress as well as support the body to fight inflammation.

INGREDIENTS:
* 1 cup chickpeas (soaked overnight and cooked) or 1 tin organic chickpeas (drained and rinsed).
* 1/2 raw beetroot, grated (approx 1/2 cup)
* Juice of 1 lemon
* 1 tbsp tahini
* 1 garlic clove, crushed
* 1 level tsp ground cumin
* 2 tbsp extra virgin olive oil
* 2 tbs warm water
* Salt and pepper to taste.

METHOD
* Add all ingredients to food processor and mix until smooth (you may need to add a bit more warm water to achieve a smooth paste).

This was... amazingly delicious! One pan for all my meal! This was a Tempeh (fermented soy bean with more nutrients than tofu) burger I made from the organic azuki beans tempeh 😋 put some Tika Masala, nutritional yeast, lemon and salt and then... was just a great meal

Açai is a superfood high in antioxidants with many health benefits! It’s definitely worthwhile to add it into your diet. You can grab frozen packets at your local health store ☺️👍 You’ll also need a high powered blender to combine all the ingredients.
The frothy açai mix consists of: -frozen açai packet
