These are b-grade tomatoes from @jbgorganic ... sold as such because they were extremely ripe when I got them. Which basically just means I needed to make my salsa pronto. Of course we didn’t want to leave, but we packed in a week full of good times together. It was my first time traveling with my new teenager (gah!), and actually it was not much different than traveling with him when he was 12. I am blessed that Noah still wants to hang out with me and we enjoy doing the same things. We read books by the beach, played in the pool, and enjoyed the many vegan food options the Chef’s prepared for us including vegan pancakes, healthy green smoothies, and even coconut cheese on the vegan portobello mushroom burger! .

My digestive system has been out of whack and over the weekend I didn’t help it by over-eating some foods I know I should limit. Then my body told me I overdid it and I was in pain and loss of sleep from Sunday to Monday. So I’m taking the next week to reset with a good breakfast and then #bonebroth for the rest of the day (along with proper #hydration). Today is day two of my #OMAD (one meal a day) reset. My plan is at least seven days of this. Here’s to the beginning of a journey of digestive healing.

🍉 Watermelon is super juicy! It contains 96% water and 9 g sugar in one cup.⁣
🍌 Bananas, on the other hand, contain less water at 74% water and 14 g sugar per medium fruit.⁣
🍇 Dried fruits, like dates and raisins, contain even more sugar - 28 g in six dates! They have been dehydrated of water, and although delicious, must be eaten in moderation.⁣

🍊 Like other monosaccharides (glucose and galactose), fructose is absorbed directly into the blood during digestion. Its rapid absorption boosts blood sugar levels within minutes, giving you rapid energy. ⁣

🏄🏼‍♀️ Timing your consumption of foods rich in simple sugars, like fruits, honey, and refined grains before exercise is a smart way to put these blood sugars to use. #foodforfuel⁣

🧀 + 🍎 It’s also smart to pair simple sugars with a source of protein, fat, and/or fiber. These nutrients slow digestion and absorption, allowing steady release of sugars into the blood and more sustainable energy. Otherwise, elevated blood sugar levels will spike insulin secretion, ultimately causing a hypoglycemic crash.⁣

LAMB MEATBALLS: 1lb lamb, 1/2 yellow onion grated, zest of 1 lemon, sea salt, black pepper and smoked paprika to taste. roll into balls (i used cookie scoop - made 12) and place on parchment paper lined baking sheet. bake for 18 minutes.

SLOPPY JOES: 1lb ground beef, 1 bell pepper (or ~6 mini peppers), 1/2 yellow onion diced, 1/2c @sirkensingtons ketchup, 1/4c liquid aminos, 1tbsp avocado oil. add avocado oil to a pan and when hot, add pepper and onion. when peppers start to brown and onions are translucent, add ground beef. once browned, add ketchup and liquid aminos. mix well & serve 🍔

You don’t have to give up the foods you love to be healthy! It’s finding how to make the things you love work for you! My kids LOVE jelly, but jelly is loaded with refined sugar and processed junk. I’m not saying I don’t give them jelly of course I do, I’m a busy mom. BUT, when I can improvise and make a healthier version of something I always try that first! So I had berries and honey through them in a pot with some water and chia seeds warm it up just enough to get the berries soft and blend with immersion blender..... spread on some flaxseed toast and voila! A breakfast that the pickiest eater I know enjoys! Oh and that’s my son in the background licking his plate, because we don’t have issues with his eating😆

Yesterday I presented a "prescription for physique transformation".

Step one of that process was establishing and eating to a calorie deficit.
.
But where do you start? How do you work out your maintenance calories and target deficit?
.
Well, there are LOTS of ways you could do this, but I'll give you a couple to get you going – one "quick and dirty", the other using formal "calculator".
.
The first method uses a simple multiplier of 14-16 calories per pound of body weight. For the example, I picked the middle – 15.
.
The other method uses my preferred TDEE (Total Daily Energy Expenditure) calculator at https://tdeecalculator.net/.
.
You enter you sex, age, height, weight and estimated body fat (if you have it), along with an "activity level". I always pick moderate (3-5 days training) as my start point.
.
As you can see, both methods spit out a number that's close to 2700 kcal
.
However, if you'd used 14 or 16 calories per pound using the "quick" method, you'd get a pretty different answer. This highlights just how "approximate" these calculations are.
.
As a result, you should only consider these a start-point, and trial and error over multiple weeks will be needed to determine your maintenance level.
.
(This is why my first "phase" with clients is almost always a maintenance phase!)
.
After that, it's just a simple case of calculating your deficit. So in this example, 540 kcals.
.
That gives us our calorie target of 2160 per day.

Red and green for the win!  Look at those juicy sweet strawberries with that crisp tart rhubarb.  Both Ontario grown.  Thanks to @delfrescopure @mairlynsmith and I received 48 clamshells of YES!berries AND 144 sweet bell peppers for our cooking demos this week.  We were able to give each participant a swag bag with this #ontarioproduce.  How lucky are we?  How lucky are they?  A special shout out to Ontario farmers for taking care of our community. These strawberries were grown in a recycled  growing medium and the farmers feed the plants with nutrient-enriched water which helps minimize environmental waste.  They were firm, extra sweet and seriously delicious.  Fresh Ontario strawberries all year round.  Win win for everyone!

Mix in a cocktail shaker and pour over ice. YUMMMM

Did you know 🌸 Only 12% of Americans get their?
🌸 2/3 of the English population do not eat their fruit and veg
🌸 3/4 in New Zealand and almost half in Australia only say they eat 2 servings of fruits and veg a day! 
I can say whilst traveling and being constantly on the move I do struggle with getting my recommended daily amount.

However, since I stared started taking these whole food capsules I am able to get over 17 different varieties of fruits and vegetables before I even start my day.

🌸 2/3 of the English population do not eat their fruit and veg
🌸 3/4 in New Zealand and almost half in Australia only say they eat 2 servings of fruits and veg a day!
I can say whilst traveling and being constantly on the move I do struggle with getting my recommended daily amount.

However, since I stared started taking these whole food capsules I am able to get over 17 different varieties of fruits and vegetables before I even start my day.
